Carne Asada Street Tacos



Marinade:
1/2 cup lime juice
1/4 cup lemon juice
1/4 cup orange juice
1/4 cup soy sauce
2 Tbs apple cider vinegar
1 tea minced garlic
1 tea salt
1 Tbs chile powder
1 tea cumin
1/2 tea cayenne pepper

Tacos:
2 lbs skirt steak, sliced into thin strips or cubed
2 Tbs olive oil
1/2 yellow onion
salsa, guacamole, cheese, sour cream
tortillas

Mix all the ingredients for the marinade together and then add the steak. Marinate for at least 3 hours. Turn the Saute function on the Instant Pot and add the oil and onions. Saute onions until soft. Add the steak to the pot and set to Meat/Stew mode. Cook for 6 minutes with a 15 minute natural release. Then quick release the rest of the way. Remove the steak from the pot with a slotted spoon and serve on taco shells with toppings of your choice.

Anyone tired of Thanksgiving leftovers? I know. Me neither. But at some point we have to move on. We have made this recipe quite a few times. It's great to step up the classic Taco Tuesday every once in a while. There are a lot of ingredients in the marinade but its worth it. You can even start the steak in the marinade and then freeze it to make it an easier meal during the week. We recently found these tiny little street taco shells at the grocery store. I added them to my grocery order by mistake but I think we will use them from now on. The perfect size for a street taco. It's time to elevate Taco Tuesday!
