Turkey Breast


4 lb turkey breast
poultry seasoning
1 jar turkey gravy
1 cup water
cornstarch/water

Pour 1 cup of water into the Instant Pot. Place turkey breast on trivet and lower into the pot. Season with poultry seasoning. Pour gravy over the turkey. Pressure cook for 60 minutes with a 20 minute Natural Release. Quick release remaining pressure and remove turkey from the pot. Whisk together about 1-2 tablespoons of cornstarch with an equal amount of liquid from the pot. Press the Saute function button on the Instant pot and pour the slurry into the gravy. Bring to a boil and let simmer until desired thickness. Meanwhile, remove the skin from the breast and discard. Carve the breast into slices and return to the pot. Enjoy with all the sides!

Now, before everyone judges me, let's be clear: I would not choose this method as my first way of cooking a turkey. NOTHING beats smelling the turkey roasting in the oven or tending to it as it smokes on the smoker. But, I was working on Thanksgiving and thought it would be fun to try for our potluck. Who gets freshly cooked turkey from the work kitchenette!? Well, we do now! I was not disappointed. This turkey came out very moist and more flavorful than I had expected. When I first took the lid off, I thought disaster had struck. The skin gets very soggy and it made the turkey appear still under cooked. But when I peeled the skin away to cut into it, I discovered the breast was indeed fully cooked. I quick removed the rest of the skin and sliced the turkey before anyone else could see it- notice there are no pics of the breast before carving (it's not pretty!). Disaster averted. A fantastic substitute for a roasted or smoked turkey. If you are short on time, I would give this a try. In fact, I forgot to take the breast out of the freezer until the night before so it was still mostly frozen and all still turned out right. We had about 8 people and the 4 pounds was a little slim but with all the sides and desserts it turned out alright. I would get a slightly larger one next time though, maybe even boneless. So, if you are working on Christmas and are looking for something to bring for the potluck- give this a thought!
