One batch of Bisquick Classic Pancake batter
One cup of frozen blueberries
Spray the silicone mold and silicone lid generously with non stick spray. Prepare the batter as directed and fold in blueberries. Fill cups 3/4 full and place the lid on top. Add 1 cup water into the pot. Put the mold on the trivet and lower into the pot. Cook on High Pressure for 8 minutes. Use a Natural Release for 2 minutes and then quick release. This recipe makes about 14 bites. Enjoy with maple syrup!
This recipe was worth opening up the blog again. What a quick and easy way to prepare breakfast for the littles for school mornings. Freeze and pop in the microwave when ready to eat! Easy peasy. I’m sure any pancake batter would work. This is what I had on hand the first time I made them and they worked so that’s what I use now. Save the homemade batter for Sunday mornings when you have time to kill. You can cover the mold with aluminum foil instead of the silicone lid, but I felt this was a bit wasteful. Definitely don’t forget to spray the mold and lid prior to filling. I forgot and it was a disaster! If you don’t have the mold yet, I suggest getting one! (Pic of the one I have posted below. I purchased on Amazon for $10.) I make egg bites and poached eggs in it as well and am going to try the brownie bites soon! Hope you enjoy this as much as I do!
